Wednesday Night Dinner

I love food. I have apps such as Tender and Pinterest just to get new recipes and make a mess in the kitchen. I am always ready to cook and eat, so this afternoon I decided to cook dinner. I planned to make baked salmon, roasted broccoli, smashed potatoes and stuffed mushrooms. Since I gave up meat I have become obsessed with mushrooms so I eat them A LOT. I know plenty of people that  don’t like them but they definitely worth a try.

Disclaimer: I am not a photographer and these pictures can be 100 times better than they are but I tried.

To start off baked salmon:

DSC_0821This is wild salmon and it was seasoned lightly with just salt, pepper, and lemon. I do not think that salmon needs to be heavily seasoned because it has a really good flavor already and its not necessary to over power it. I placed this is in the oven by itself for 350 degrees

Health benefits of salmon include:

Omega 3- this is a fatty acid that is beneficial to your body. It is said that this helps with depression, helps lower blood pressure, and is extremely beneficial for the health of your heart.

Salmon also contains a variety of vitamins such as vitamin D, A, and B.

Roasted Broccoli:

DSC_0823Extremely simple! Just salt, pepper, red pepper flakes and extra virgin olive oil.

Smashed potatoes:

DSC_0825For these I boiled them first so they are probably about 85% cooked, then I placed parchment paper on a baking sheet and smashed the potatoes with a fork. I seasoned it with salt, pepper, red pepper flakes and ground thyme.

Stuffed mushrooms:

DSC_0810I got a pack of white mushrooms and I spooned out filling of the mushrooms but do not throw them away, the filling will be used later.

DSC_0808  I chopped up half of the filling with tomatoes and onions. Placed that into a bowl  to use for a type of salsa to put back into the mushrooms.

DSC_0824I also added salt and pepper to it.

DSC_0831I placed cheese in the mushrooms (you can use whatever cheese you like best) then a spoonful of salsa and then I placed more cheese on top of that.

For all of the veggies the oven was at 450 degrees and about 5-10 minutes before I took them out of the oven I put it on broil.

I’m not the best cook but at least I try and it’s really not that hard, it just takes a little patience. Also, I think it’s very important to know why certain foods are healthy for you. It’s cool to say “Salmon is good for you because it has Omega 3” but what does that even mean? Do your own research so you know exactly why you’re eating these things.
