I have always wanted to try Cauliflower rice. I always thought it was so interesting and I figured I could incorporate it into my life. I went to the store and bought the best cauliflower that I found. So excited I came home and began this experimentation. I cut my cauliflower into smaller pieces to stick it into my food processor and pulsed it so it looked like small rice. I mixed this “rice” with chopped parsley and then I didn’t know what to do next. I moved with my family to Georgia almost two months ago and where we live the closest Chipotle is about an hour and thirty minutes away, which for me is extremely disappointing. I love Chipotle! So I decided that maybe I could mimic their lime-cilantro rice. Well to start off, I did not have cilantro (So strange, we always have cilantro!) and on top of that, we didn’t have lime either! I thought I could be clever and use parsley and lemon juice instead and let me tell you, that was not a good idea. I took only some of the cauliflower rice with lemon juice and parsley and try to pan cook it…. it was horrible. Before trying to make this rice I googled a bunch about it and some people even eat it raw! I honestly do not know how. I don’t know if I’m just being dramatic but I did not like it one bit.
BUT I didn’t want to stop there. I refused to waste my cauliflower rice. I tried to mix it with corn flower to make little cauliflower-corn tortillas and that was not bad. It just had a different flavor to it. I also made little corn-cauliflower balls filled with provolone cheese, these were not bad at all. I was still not satisfied though. I placed my cauliflower rice in the refrigerator and just slept on it.
Today I came across a cauliflower fried rice recipe and I was thought I might as well just give it a try. I’m extremely happy that I did. In my pan I heated up probably about a teaspoon of coconut oil with about a teaspoon of minced garlic as well. While that’s heating up (not burning the garlic!) I chopped up some carrots and onions and placed that in the pan too. After that I chopped up some pre-boiled broccoli and added that to the pan. I seasoned all that with a little bit of salt (Don’t go crazy, soy sauce has a lot of salt) and red pepper flakes and cracked black pepper. I added my cauliflower rice to it and let it all cook together. I then added my egg to it. When it was almost done I poured probably about a tablespoon and a half of soy sauce over the rice and a bit of hot sauce too!
- 1 teaspoon of coconut oil
- 1 teaspoon of minced garlic
- 1/2 cup of boiled broccoli
- 1/2 cup of chopped carrots
- 1/4 cup of chopped onions
- 1 cup of cauliflower rice
- 1 1/2 tablespoon of soy sauce
- 1 egg
- Hot sauce (optional)
- Salt and pepper to taste
I was kind of nervous to try it (given my past cauliflower rice experience) but it was amazing! I was so excited and happy that I found a great recipe for this rice. And I’m also happy that I am able to share my failure and my success with cauliflower rice. Don’t be discouraged, try this rice for yourself, maybe you’ll like it!
Cauliflower is also said to be one of the world’s most healthiest foods. It is said to boost heart health, its rich in vitamins such as vitamin C and K, and 11 grams of protein per head (not too bad)
Give cauliflower a chance!
