Roasting your pumpkin

My favorite part of fall last year was carving and cooking my pumpkin so this year I decided to do it again. I love doing this and will hopefully do this every year. I just want to share with you guys how I roast my pumpkin.

It’s really easy, to be honest, and there is no reason why someone can’t do this their selves instead of buying canned pumpkin puree (unless you don’t have time of course).

So you get your pumpkin and start to cut it up. (Preheat oven to 350 degrees so by the time you’re done chopping up your pumpkin you can just pop it in the oven instead of waiting for the oven to preheat)

Chop off the stem

Then cut it in half

Scoop out all of the innards, but do not throw it away!

Then I cut my halves in half, just so the cook time isn’t so long, and I coated them with coconut oil

Once your done coating it just pop it into the oven

After about 30-40 minutes (or until your fork can easily go through the pumpkin) it is done!

It’s going to look a little darker but not much.

Then you’re going to peel the skin off, they come off very easy after they’re cooked.

Once I peeled them all I put them into the refrigerator because I have to go to the store to buy some ingredients. But great pumpkin recipes are on their  way + fun pumpkin seeds.

Let me know if you roast your pumpkins differently or you have any tips OR fun pumpkin recipes, I’d love to hear them and give them a try.

Have a great Thursday

– Love Nicole ❤️
