Healthy No Bake Cookies

Jacob and I hardly ever buy snacks, which becomes a big problem throughout the week. I am a big ‘snacker’ but I always thought that if I didn’t buy snacks then I wouldn’t crave them. It turns out that doesn’t really work. I end up being miserable during the week trying to find anything to snack on in the house. But, these healthy no bake cookies are perfect!
Well, I figured out how to fix this problem without buying junk food but instead by making these awesome cookies.
I have seen tons of cookies like these but I’ve never made them. I decided to make them because I know Jacob would love them and he did!
Ingredients for your healthy no bake cookies:
3/4 cup of creamy peanut butter
1 tablespoon of honey
1 cup of oats
2 tablespoons of chia seeds
1/2 cup of chopped almonds
1/4 cup of chocolate chips
1 teaspoon of vanilla
- In a bowl, microwave vanilla, honey and peanut butter together. Heat in increments of 30 seconds
- Add in all your other ingredients.
- Mix together with your hands, form small balls and flatten like cookies.
- Refrigerate and eat when ready.
Obviously you can add in anything that you’d like, that’s the beauty of this recipe! Shredded coconuts or even dried cranberries would be a delicious addition to these cookies. Try them out and let me know what you think!
