Fall is here, finally! It has started to get cooler outside which I definitely appreciate. I haven’t been able to go for a run outside because it’s been 90 degrees outside but now, finally, it’s cool and beautiful. To celebrate Fall here is a super easy pumpkin cornbread.

If you are going to buy a pumpkin and want to cut it open, I suggest doing it outside. When the weather is nice you can lay out a blanket and it’s the most perfect Fall activity to enjoy with family and friends.

Ingredients for your pumpkin cornbread:

  • 1 cup of milk
  • 1 cup of flour
  • 1/4 cup of honey
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 2 eggs
  • 1 1/4 cup of cornmeal
  • 1/4 cup of sugar
  • 1 teaspoon of butter
  • 1 cup of pumpkin puree
  • A dash of ground cloves and nutmeg

Steps for your pumpkin cornbread:

Preheat the oven to 425 degrees
  1. In a mixing bowl combine all of your ingredient.
  2. Grease the baking pan with butter.
  3. Pour your pumpkin cornbread mixture into the baking pan. Spread it evenly.
  4. Cook for 40 minutes or until golden brown.
  5. Once done, let cool and then cut into it and enjoy!

Tips:

This pumpkin cornbread is not sweet, so some things that you can add include:

  1. Topping it off with butter, such as a honey cinnamon butter or even pumpkin butter to keep up with the pumpkin flavor.
  2. Drizzle with honey.
  3. Add corn into the mixture.

My favorite products are Publix’s Greenwise brand. It’s usually cheaper than organic name brands and I trust Publix products. Most grocery stores are now creating generic products organic which is awesome! Kroger also has their own line. Buying organic isn’t imperative, especially when it’s expensive. This holiday season is always a struggle for me. I want to cook everything but wow, that’s a lot of money.
