Let me tell you a little secret about myself….. I hate salad.

I know!

I think this hatred stems from people thinking that I should love them.

I was a vegetarian for about 2 and 1/2 years and I refused to base my food intake around this dish. People would always make comments like, “How can you be a vegetarian if you don’t eat salad?”. That is honestly such a dumb question. Salads can be so bland and boring but not anymore!

For the holidays I love fun salads such as this one. This salad is perfect for the holidays because it’s so easy to make and the flavors are amazing.

Let’s face it, the holidays can be so stressful. This harvest salad is actually perfect for a last minute dish, in case you underestimated how much food you made or a last minute guest is coming!

Ingredients:

  • 1 cup of chopped toasted pecans
  • 1 cup of dried cranberries 
  • 1 and 1/2 cup of feta cheese 
  • 2 sliced apples 
  • 1 container of spring salad mix
  • Salad dressing
    • We used a mixture of Rice wine vinegar, Dijon mustard, olive oil, salt and pepper
    • But you can use whatever you want

Salads are pretty easy to make, just put all the ingredients together and you’re done.

We waited to put the dressing on until we were ready to eat it and it was delicious. I highly recommend doing this so your salad isn’t soggy.
